“Understanding Exposure”, “Understanding Shutter Speed” and “Understanding Photography Field Guide”, all by Bryan Peterson, would be a good start.
“Hot Shoe Diaries” by Joe McNally will take care of your flash photography.
“Get the Most from Photoshop” by Simon Joinson.
“Photoshop Lightroom 2 Adventure” by Mikkel Aaland. http://www.oreillynet.com/pub/au/399 for a bio of Aaland and a list of his other books on the subject.

If you want something for black and white photography, I would suggest “John Hedgecoe’s Complete Guide to Black and White Photography”. That book even directs you on building your own darkroom.
